Italian-influenced mountain cuisine is prepared with care at the two-level Grille, which emphasizes local, sustainably produced ingredients. The regional focus extends to the artwork that adorns the walls; many pieces are by area artists. The menu changes regularly depending on what is in season, but it always includes hand-cut steaks, wild game, and fresh seafood. Grilled Montana rainbow trout marinated in lime, herbs, and olive oil is another staple, as is the bison burger, served here with pickled red onions and white cheddar. All the desserts are made in-house from scratch. The restaurant is open daily for dinner; the deli serves soups, salads, sandwiches, panini, and a few entrées like lasagna for lunch.
